This winter, I've found myself seeking an all-purpose cookie recipe—something buttery, simple, and made with whole grains that I can spice up depending on the season. After some tinkering, I think I've solved it!
These cookies are perfect with butter and jam for breakfast, smeared with a creamy goat cheese or some nut butter for a snack, or eaten plain as a tea biscuit. They use just 5 main ingredients, including oat flour, one egg, natural sugars, and a high-quality, grass-fed butter. The end result is satisfying, buttery, and has a great crunch!
