Nothing says April to me like violets! Over the last few years I have encouraged them to grow as a ground cover all over my garden, so right now I feel like I’m in violet land. It’s magical! The blanket of purple blooms is the sweetest spring sight, and to know they are tasty and nutritious makes them all the more delightful.
Abundant and beautiful, violets were my inspiration for the spring version of this Basic Cookie Recipe. In this one I switched from oat flour and warming spices, to organic wheat flour and some fresh lemon juice to brighten up the flavor for the season. The addition of the blossoms is a treat for the eyes as well!
